Carbs on Carbs on Avocados


Lunch is starting to annoy me. The closest places to me for midday eating are Subway and Fresh and Easy. Fresh and Easy has a prepared foods section, but literally, there are only 2 items that are completely vegan. An Organic chipotle southwest wrap with black beans and sweet potato which is actually delicious, and a tofu basil spring roll with peanut sauce which is also really tasty. Problem being, this one has modified corn starch and tofu aka soy, eating it repetitively just wouldn't be smart. There is a greek salad that has feta cheese in a container on the side but the romaine lettuce in all 10 salads that I checked today were brown and really unappetizing.

So, I am reduced to Subway. I get the "veggie delight chopped salad" and the employees always look at me funny when I say no cheese. Then I have to ask if there is dairy or chicken stock or eggs in the salad dressings and their ready to stab themselves in the eye with a squeeze bottle. I got the subway vinaigrette on the side and my salad was actually pretty yummy but I can't help but think all the veggies are GMO and theres probably MSG and all kinds of additives in the dressings. While I am still super beyond thrilled happy excited with my Vegan status, I am getting a tiny bit frustrated at the lack of on-the-go options.
The good news is, that before choosing Vegan I was a little bit preoccupied with my carb intake. I read a really great post on Instagram today which helped me to full embrace what I already knew and relax more fully into the fact that carbs are friends not fears!

Loud and Clear!! Overall I feel a lot, lot better about my body and my diet since quitting animal products and feel comfortable to enjoy my 1/2 bagel topped with peanut butter, blueberry jelly and bananas next to my grapefruit for breakfast!
Tomorrow though, I'm going to get my lunch from the new Juicy Factory on Hollywood Boulevard. They boast some nice looking wraps and salads. I give thanks in advance that it's awesome. Glory to God.
