Say No to Soy

My challenge is no longer maintaining my Vegan-ism. I'm confident that I will be able to continue with this lifestyle with ease and grace. Now, I just have to keep writing about my experience. So once again I use this as a space of accountability. I write it here for everyone to read...I resolve to author Vegan journey for at least 30 days total. Which leaves me with about 21 days to go.
Now, lets talk animal product free food. I've always been keen to the fact that a huge percentage of foodstuffs contain soy ingredients and that soy (contrary to popular belief) is actually really not necessarily good for you. There still seems to be a lot of controversy over the truth about soy, but my intuition tells me it is something to be avoided.
From my brief research, soy contains isoflavones or phytoestrogens which are basically a weak version of the naturally occurring estrogen hormone in our bodies. The structure similarity of these compounds allows phytoestrogens to sometimes inhibit the hormone in mammals like us, which in the quantities that it is consumed by the non-lable reading person can not be a good thing. Perhaps more alarming, between 80 - 90% of the soybeans in the US are genetically modified and processed. It is widely accepted that GMO food has no business in our bodies.
When you decide to go Vegan it becomes glaringly obvious how many less options there are for a quick lunch. On top of that, what is available is pretty much guaranteed to contain soy. Here in lies a double edged fork. Eat vegan without increasing your soy intake. Oof. I'm up for it. Bring it. Food-industrial-complex you will not break me!
